Brownies - The gooey ones


  • 150g butter
  • 75g light soft brown sugar
  • 150g plain chocolate
  • 1 tbsp golden syrup
  • 3 eggs
  • 125g golden caster sugar
  • 1 tsp vanilla extract
  • 150g plain flour
  • ½ tsp baking powder
  • 3 tbsp cocoa powder
  • 4-6 tbsp of Nutella


  • Heat the oven to 160 (fan).
  • Melt the butter, chocolate, brown sugar, and golden syrup in a pan on a very low heat.
  • Whisk the eggs and golden caster sugar in a big bowl. Keep whisky for a few minutes until it's light and frothy.
  • Then add the vanilla.
  • Sift in the flower, baking powder, cocoa powder, and the melted butter and chocolate mix.
  • Fold all the mixture together.
  • Pour half of the mixture into a 20cm baking tray.
  • Scoop on dollops of the Nutella.
  • Pour on the remaining mix.
  • Bake on 160 for 30 mins.
  • Leave it to rest for quite a while.
