• 45 ml white rum
  • 20 ml lime juice
  • Small handful mint leaves, plus extra sprig to serve
  • 1 (or 2) tsp granulated sugar
  • Soda water, to taste


  • Muddle the lime juice, sugar, and mint leaves in a cocktail shaker.
  • Add the ice.
  • Pour over the rum.
  • Stir with a long spoon.
  • Top up with soda and serve with mint garnish.
